Great steaks and fish in a cosy setting, with lovely wine. Relatively quiet, so you can actually talk.

An Italian bistro in an old New Town building that used to be one of Prague's best-known delis between the wars. Everything revolves around the charcoal X-Oven, so come hungry for dry-aged steaks and whole grilled fish, with fresh pasta and a proper cheese-and-salumi board to start. The room is a bit industrial, with rough walls and bare bulbs, and it's buzzy without being stuffy. It opens early for Italian breakfast and serious espresso, which makes it a great morning stop too.

Typical Czech cuisine and really good tank beer. It will probably be quite noisy.

Čestr is the steak place that Ambiente, the group behind Lokál and Kalina, runs as a tribute to Czech cattle. The name comes from 'český strakatý', the Czech red-and-white Fleckvieh breed. They buy whole animals from trusted farms and dry-age and butcher them behind a glass counter, and you can taste it. It's a bright, airy room with an open kitchen, a few steps from the State Opera. Go for a proper steak, the tartare and a perfectly tapped tank Pilsner.

A really great French restaurant — small, with a nice wine selection. You can reserve a separate space for about 8 people. A quiet place.

A tiny, grown-up French restaurant on quiet Rybná street, where chef-owner Jan Kracík, trained in Burgundy and Champagne, is in the kitchen for every plate. Think proper French sauces, veal cheeks bourguignon and a well-chosen French wine list, served in a warm room of white oak, granite, wine racks and big surrealist canvases. The service is some of the best in town, so it works well for a date night or a slow, old-school lunch.

Modern cuisine: lovely tasting menus, or just a normal meal. Quiet, and there's a completely separate space for 8 if you want privacy.

Tucked into the historic Lannův palác just off Náměstí Republiky, Portfolio is a grown-up, quietly polished place: two floors of warm wood and clean lines, and a service team that makes you feel looked after. Chef Aleš Pátek's kitchen takes Czech classics like duck, plums, river fish and poppy seed and gives them a modern, seasonal spin. The wine list is serious. It's a great choice for a special dinner or a long business lunch that doesn't feel stuffy.

Beautiful and modern, with very tasty food, right at the river.

Mlýnec is the place to take someone when you want a proper dinner with Charles Bridge right outside the window. It sits on the little pier by the Old Town end of the bridge. It could easily have been a tourist trap, but the cooking is serious: modern, seasonal and a bit playful with Czech classics, and the Michelin Guide lists it as a Selected restaurant. It isn't cheap, but book a window table for sunset and it's worth every koruna.

Modern food and tasting menus. Relatively quiet.

One of Old Town's longest-running fine-dining addresses, in a quiet lane just off Betlémské náměstí, a few minutes from Charles Bridge. These days it's a calm, softly lit room serving polished modern Czech-meets-European cooking: think prawns with wasabi and mango or a veal Wellington, with a genuinely good wine list and thoughtful pairings. It isn't cutting-edge, but it's a reliable, grown-up choice for a special dinner or a long weekday lunch in the centre.

Italian breakfast, proper espresso and fresh pasta, across from the Spanish Synagogue.

A sleek little slice of Italy on a quiet corner of Josefov, right across from the Spanish Synagogue. It's run by Ambiente (the Lokál people), pours Tonino Lamborghini coffee, and looks the part too: white and graphite interiors, chrome, and black parasols on the terrace. Come for an unhurried breakfast of croissant and espresso, or a plate of fresh pasta after walking around the Jewish Quarter. It's calm and properly made, and much better than the tourist traps a few streets away.

A greenhouse of a bistro in Karlín: brunch, bakery and a menu that works for vegans and meat-eaters alike.

A big, airy bistro on the ground floor of a Karlín office building. More than 600 plants hang from the industrial ceiling, so it feels like a greenhouse with a wine list. It was started by the team behind the vegetarian restaurant Etnosvět, and the whole point is that vegans, vegetarians and meat-eaters can share one table without anyone compromising. Come for a slow weekend brunch or a relaxed dinner, and take home a loaf of their own sourdough.

Dry-aged steaks and polished pasta under red-brick vaults, a few minutes from Old Town Square.

Riccardo Lucque's second Prague restaurant (La Collezione group), open since 2009 a few minutes' walk from Old Town Square, set under red-brick vaulted ceilings with a window looking into the kitchen. The big draw is dry-aged beef grilled to order, backed by fresh fish, polished pasta and a deep list of Italian wines. It is a Michelin Guide-listed spot that feels smart but relaxed, a reliable choice for a proper Italian dinner in the centre.

A soaring former banking hall with a wood-fired grill and perfectly tapped Pilsner.

A huge, buzzing beer hall set in the cubist-modernist banking hall of the former Anglo-Czechoslovak bank on Hybernská, under a glass roof and around a beer tower that rises through all three floors. Chef Marek Fichtner's kitchen centres on a wood-fired Infierno grill, turning out steaks and slow-smoked beef ribs alongside Czech classics like venison svíčková, all washed down with carefully tapped Pilsner Urquell. It is big and lively rather than intimate, and a touch pricier than an ordinary pub, but the room alone makes it worth a visit.

Peking duck, dim sum and hand-pulled noodles from open kitchens. Best with a group.

A big, buzzy three-level restaurant a few steps from Náměstí Republiky. It has open kitchens where cooks from across Asia make dim sum, pull noodles and carve Peking duck in front of the tables. Dishes come out to the middle of the table as soon as they are ready, so it works best with a group sharing several plates. The duck is the reason most people come, and Asian-inspired cocktails and a good tea list round it out.

Glamorous pan-Asian sharing plates in an old market hall. Loud, fun and made for celebrations.

SaSaZu is a big, glamorous pan-Asian restaurant in a former market hall at Holešovice's Prague Market, with red lanterns, dark wood and a buzzy, clubby energy. The menu is built for sharing, from dim sum and modern sashimi to Southeast Asian curries and grilled wagyu. Expect upscale prices and a loud room later in the evening. It's a great pick for a celebratory group dinner, less so for a quiet date.

All-day breakfast plates and great coffee in Karlín. Perfect for a light lunch.

The home café of doubleshot, one of Prague's best-known specialty roasters. It sits on a corner of Karlín's Křižíkova street, under brick arches with a big painted cup mural on the wall. The coffee is serious, and filter is the house speciality, but most people come for the all-day breakfast plates made with bread from the café's own bakery. It's a Karlín favourite and it fills up fast, especially at weekend brunch.

Wood-fired sourdough, farmhouse breakfasts and fermenting know-how in a bright Karlín hall.

Ambiente's bakery with a kitchen in a converted industrial hall in Karlín, where the house rye-sourdough 'bread 33' is baked on beech wood every day. A famously long beer hall with perfectly tapped tank beer and schnitzels, steps from Old Town Square.

The original Lokál and literally the longest: a vaulted beer hall nearly 70 metres deep, pouring tank beer from twelve tanks to up to 1,300 guests a day. The kitchen sticks to honest Czech pub food — schnitzels fried in butter, goulash, tartare, fried cheese — plus a changing daily menu. Loud, busy and cheerful, right in the centre of Old Town.

Chandeliers, a painted ceiling and a famously good breakfast, a short walk from the river.

A grand Viennese-style café by the Ambiente group, set under a restored neo-Renaissance painted ceiling with chandeliers, marble tables and a long wooden bar. Mornings are all about the breakfast menu (eggs in a glass, Benedicts, truffled croissants) and pastries baked with the Myšák patisserie, while evenings turn quieter with French-leaning dinners and a strong wine list. A wall of wine, sommeliers who love to talk, and small plates until late near Wenceslas Square.

One of Prague's best-known wine bars, a long, stylish room off Senovážné náměstí with a floor-to-ceiling wall of bottles and a list of several hundred wines, many poured by the glass. The kitchen, led by Andrej Mišutka and creative chef Radek David, does seasonal plates with three suggested wine pairings per dish, plus tapas for grazing between meals and late into the evening. Michelin-starred seasonal Czech tasting menus from chef Radek Kašpárek, with a great-value weekday lunch.

Field is the Michelin-starred restaurant of chef Radek Kašpárek and restaurant manager Miroslav Nosek, co-owners since 2014, tucked into a quiet lane near St Agnes Convent. Its seasonal tasting menus put Czech produce — river fish, game, forest ingredients — front and centre in a relaxed, minimalist dining room. It holds one Michelin star and three Gault&Millau toques, and a four-course lunch makes it one of the more approachable starred tables in town.

Prague's long-running Michelin-starred homage to Czech cooking, one seasonal tasting menu at a time.

La Degustation Bohême Bourgeoise has been reinterpreting Czech cooking since 2006, drawing on old recipes, childhood memories and ingredients sourced almost entirely within 250 km of Haštalské Square. Chef patron Oldřich Sahajdák leads the concept with head chef Marco Christov, serving a single seasonal tasting menu in an L-shaped dining room with an open kitchen. It holds one Michelin star and is part of the Ambiente group.

Michelin-starred, fiercely local tasting menus above the Eska bakery, with an open kitchen at centre stage.

Chef Martin Štangl's restaurant sits upstairs in Karlín's converted Eska building, an airy room built around a fully open kitchen, with the Eska bakery below. The short tasting menus are built on local, seasonal Czech ingredients – foraged, fermented or from small farms – and have earned a Michelin star plus a Michelin Green Star for sustainability.
